Delicious Gnocchi from Leftover Mash
You need:
Clingwrap (plastic wrap)
Leftover potato mash or butternut.
Plain flour
Chicken stock block
Salt and pepper
Oil or butter for frying.
Method:
Add flour, salt and pepper to mash, to form a ball of dough.
Cover a work surface with clingwrap, it's less mess to clean.
Work the dough by kneading until it has the consistency of bread dough. Add flour to surface and dough as required.
Roll dough out and cut into squares or rectangles.


Boil a pot with water and the stock cube.

Pop your pasta into the water, one block at a time.

When it floats, its done.
Use as is in tomato soup as dumplings.
Or freeze for later use.
Or fry each piece till golden brown and serve with a sauce of your choice. You can add garlic and herbs to your butter, if you prefer. Have fun and get creative.

And there you have it! Filling and cheap!
